As Beverage Director, Jose Luis Sapien brings an unparalleled talent and level of expertise to the Apis beverage program. He has custom designed a unique and dangerously delicious cocktail menu, including the lauded Apiary, which features Apis honeycomb infused bourbon. Hailing from such establishments as Paggi House in Austin, as well as the Brown Bar and the Belmont Bar in Dallas, Jose boasts a long, successful career before joining the Apis team. He continues to receive recognition for his creations, including this feature in the Austin American Statesman.
Abby Searles | Sous Chef
Originally from Houston, Abby graduated from the University of Virginia with an arts degree. As part of her studies she traveled to places like New York, Paris, and Sicily where she began to be inspired by food. As her passion grew Abby decided to pursue cooking full time, so she moved to New York City to learn from the best. After graduating from the Institute of Culinary Education she found work in Michelin-starred kitchens run by some of the city’s most talented chefs including Larry Forgione, Marc Forgione, Anita Lo, and Jeremy Bearman. After a couple more years in the big city she decided to move to Austin in search of a more relaxed pace. She was pleased to find not only sunshine and front porch sittin’, but a creative and passionate restaurant culture. Abby is thrilled to be at the forefront of this exciting industry as part of the Apis team.
